Background	Pepsinogen, synthesised by the main cells of the acid-secreting glands, is transformed into pepsin in the lumen of the stomach by the action of hydrochloric acid (HCL) or pepsin, which is already active and breaks down proteins into fat, peptone and a few peptides. The optimum pH for this enzyme is 2. After entering the small intestine, the enzyme activity is lost.
Storage	This product can be stored at 2°C-8°C for one month without detectable loss of activity. This products are stable for twelve months from date of receipt when stored at -20°C to -80°C. Aliquot and store at -20°C to -80°C. Avoid repeated freezing and thawing cycles.
